I figured I ought to follow up on my recent post about butter cookies. Despite the disappointment of not being able to make gluten-free butter cookies during Christmas, I did find a great recipe afterwards that only required a little modification.

We’ve made the cookies twice now. The only modification to the given recipe was substituting honey for sugar as the sweetener, using half as much honey compared to the amount of sugar called for. The cookies have come out great. They are definitely sweet enough to satisfy our cravings for sweet foods, and we can feel a little better about eating them, given they are gluten free. They still have a lot of sugar of course, so we try and go easy on them, which is easier said than done!
